Just a few ingredients which makes these simple to make. You will need a blender for this recipe otherwise you can’t get them to stick and roll into balls. I like to add protein into mine and add vanilla but if you don’t have any don’t sweat it these are still tasty without.
Blend all ingredients in your food processor. You may have to scrape down the edges a few times as these become sticky. Roll into balls. If you want extra coconut then roll into the coconut after they are rolled into balls. These freeze well.
- 1 1/2 cups Oats
- 4 tbsp Honey
- 6 tbsp Lemon
- Lemon Zest from 1 Lemon
- 2 tbsp Chia seeds
- 1/2 cup Coconut, unsweetened flaked
- 1/4 cup Coconut for rolling the balls in
- 1 scoop vanilla protein powder (optional)
